I grew up loving dirt cups, a dessert made with chocolate pudding, crushed chocolate sandwich cookies, and gummy worms. Traditionally, I make them for Halloween dessert every year — my kids look forward to the chocolaty treat! One year, a friend shared a picture of a “sand bucket” dessert made with vanilla pudding and vanilla sandwich cookies. A light bulb went off immediately, and thus the summer sand cup treats were born!
Ingredients:
1 package instant vanilla pudding
2 cups cold milk
1 cup heavy whipping cream
1 package of vanilla sandwich cookies (I used Glutino’s to make mine gluten free)
1 theater box of Swedish Fish
Cocktail umbrellas (optional)
Mix the pudding and milk for two minutes, as the box instructions typically say. Set it aside to set for 5 minutes.
Whip the cream. No, no sugar, no vanilla. Just the cream. Wait for it…
Gently fold the whipped cream into the pudding.
Put the fluffed pudding into the fridge while you prepare the cookies and gummies.
Put the cookies into a food processor. If you don’t have one, toss them into a zip bag and smash them with a meat mallet or hands.
Spoon some cookie crumbs into the bottom of your cup.
Ladle in some fluffed pudding.
Spoon more cookie crumbs on top, and place a fish or two on top for garnish.
Stick an umbrella in your cup, and voila! A delicious no-bake summer dessert!
