My husband and I enjoy watching a few YouTubers make delicious food, and recently Emmy of EmmyEats tried an “ice cream bread” recipe. I thought it sounded great for french toast, and my husband looked at me and said, “That’s in the second video.” Lo and behold, Emmy thought so, too! Based on her experience and thoughts, here’s what I’ve come up with.
If you have gluten issues, you will need:
1 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
Whisk together your dry ingredients.
Next, you will need 2 cups of melted vanilla ice cream to give it that neutral flavor.
Dump the dry ingredients into your melted ice cream and whisk until combined.
Next, pour your batter into a pan. For traditional loaf slices, use a loaf pan. I used one of my bundt pans to make smaller slices.
Bake your bread at 350 degrees F for 35 minutes (up to 50 minutes for a loaf).
Allow the bread to cool for roughly 30-60 minutes.
Flip the pan over on a plate to release the bread from the pan.
Cut your bread into slices and set aside. Now it’s time to turn this bread into French toast!
To make the ice cream French toast batter, you will need:
2 large eggs
~1/2 cup melted ice cream
Cinnamon and salt to taste
Beat the eggs with your cinnamon and salt, then whisk in the melted ice cream.
Dip the bread slices into your French toast batter, making sure to coat both sides.
Place the slices on a griddle or pan on medium heat. Let the slices cook for about two minutes before flipping.
Flip the slices and cook for about two to three more minutes. Check the bottoms to be sure.
Pile the slices up for serving. Top with butter and syrup, and serve with your favorite breakfast food!
